CELERIAC: WHITE ALABASTER

The white bulb and green stems and leaves are edible.
It has white flesh that discolours less than other varieties.
A good winter staple used raw or pan sauteed with thyme or roasted or in soups & stews.
Bulbs grow to 10cm.
Stores for long periods.

Well-drained soil.
Constantly moist soil.
GROWING TIPS
Transplant when there are 2 true leaves 15-30cm apart to encourage blanching.
Can be tricky to grow well; never allow them to dry out or become stressed.
Very rich soil and fast-growing conditions make for best results.
