PUMPKIN: RED KURI / HOKKAIDO / POTIMARRON
(CUCURBITA MAXIMA)
A popular Japanese heirloom with striking orange skin & flesh.
They grow up to 3kg in size and are teardrop in shape very versatile in the kitchen. Our favourite way to prepare them is to cut the top off, scrape out the seeds and a fine layer of flesh, then stuff the whole pumpkin with either a mince or bean mix and roast.
You then have an edible “pumpkin bowl” of hearty goodness!
